Spaghetti Sauce with Flax

Description

This is spaghetti sauce made from scratch that actually tastes pretty good and adds a nutritional punch with the simple addition of ground flax seed.

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, peeled and chopped
  • 2 garlic cloves, crushed
  • 2 medium carrots, peeled and grated
  • 1 celery stalk, chopped finely
  • 1/2 pound ground meat (beef or turkey)
  • 6 medium tomatoes, peeled seeded and chopped *
  • 1 tsp tomato paste
  • 1 1/3 cup low sodium chicken or vegetable broth
  • 2 tbsp ground flaxseed
  • Italian seasonings

* To peel and seed the tomatoes easily, plunge the tomatoes in boiling water for thirty seconds and then transfer to cold water. The skin begins to peel by itself, all you have to do is pull at it. Then, cut the tomato in half and remove any seeds with your hands.

 

Instructions

  1. In a large saucepan, saute the onion, garlic, carrot and celery in the olive oil for about five minutes.
  2. Add the ground beef and cook until it has browned.
  3. Add the remaining ingredients and bring to a boil.
  4. Simmer for twenty minutes and serve with whole wheat pasta.
