"Spaghetti" Carbonara

Why budget 500-700 Calories for Spaghetti Carbonara when you can have a much larger portion that is healthier and just as tasty for 300?
This easy recipe makes one large serving and takes 10 minutes to prepare and serve.
Ingredients
- 1/2 of a Small Spaghetti Squash
- 1/2 Cup of Broccoli Cole Slaw (or thinly sliced veggies of choice)
- 2 slices of thin sliced Westphalian Ham or Prosciutto, chopped into tiny pieces
- 1/3 cup of Classico Alfredo Sauce
- 15g of finely grated Asiago Cheese
Instructions
Slice spaghetti squash in 1/2 length-ways and microwave for 7 minutes in a shallow dish (add a small amount of water to the dish and cover with parchment paper).
Warm saute pan and add Westphalian ham with a 1/2 tablespoon of water to keep it from sticking to the pan.
Add brocolli slaw (or veggies of choice) to the pan and saute, add another tablespoon of water if needed. When softened add Alfredo sauce and stir until heated.
Scrape the spaghetti squash out of the shell with a fork onto a large plate. Top with alfredo/veggie mix.
Garnish with Asiago cheese.
