a mix of roasted vegtables with and exciting dressing

Ingredients

6 mushrooms

1 zuccini

1 egg plant

1 red pepper

1/2 white onion

2 cloves of garlic

2tbsp olive oil

1 tbsp apple cider vinegar

1 tsp grainy mustard

2 cups spinach

 

Instructions

roast the zuccini, egg plant, onion,mushrooms and garlic in a roating pan with 1 tbsp of olive oil.

when nice and golden and are juicy let cool then mix with the spinach, then combine the 1 tbp of olive oil and cider vinegar with the mustard and dress the salad.

 

trust me it is fantastic especially for dinner next to some poached salmon.
