Kidney bean and chicken soup

Description

This is a high protein soup, perfect for after you've been working out.  It also has lots of carbs and fibre from the beans.

Ingredients

Amounts per serving, multiply by number of people

50g Dried kidney beans (which have soaked over night)

160g Turnip (note this is about half a grapefruit sized turnip), chopped

Half a medium onion, chopped

Cup of spinach

3 oz boneless, skinless chicken breast, baked and torn to pieces

Coriander

Cardomom

Cumin

Salt

Pepper

Instructions

Put the kidney beans, chopped turnip, and chopped oinions in a pot of water.

Bring the water to a boil, then reduce the heat to let the contents simmer.

Add the spices to taste.  (I like lots)

When the turnip is soft, toss in the spinach, and the chicken.

Once the spinach is lightly cooked (a couple minutes generally), it is ready to serve.
