Italian Chicken

Description

This is a quick and easy chicken dish that was given to me by an italian friend I knows, that is why it is called italian chicken.  It is very tasty and low in calorie content.

Ingredients

Chicken fillets

tomatoes

peppers

garlic clove

mixed herbs

skimmed milk  (about 8oz or 250 ml)

extra virgin olive oil (just a splash)

Whole rice if wanted

Ingredients should fit comfortably in a regular size frying pan.  I never measure or weigh food sorry :)

Instructions

First fry green peppers (or any colour you prefer) with a clove of crushed garlic for a couple of minutes, then add cubed chicken, sealing the chicken, so it is no longer pink, then add a little skimmed milk, or whichever fat content milk you like, with a pinch or two of mixed herbs, bringing to the boil, them keep on a high simmer until there is just a little juice of the milk left.  This is then served with tomatoe and pepper salad by chopping the tomatoes and peppers, then adding some virgin olive oil, toss a little about 10 minutes prior to serving, to allow the olive oil to provide extra taste to the ingredients.  The chicken can also be served with some rice, but this increases the calorie content.
