A Different Flavour of Veggie Stir-Fry

Description

Most people are used to the same old, same old vegetables, so I stuck a few things in a frying pan with vegetables I wasn't used to and created a delicious vegetable stir-fry that was different that what I was used to. It's good on pasta, rice, or even just on it's own!

Ingredients

1 Tbsp Olive Oil

1 Onion

1 eggplant

2 zucchini

3 diced tomatos

Spinach

Mushrooms

Garlic

Italian Seasonings

Instructions

  1. Saute the onions in the olive oil until they are transparent
  2. Cube an eggplant and add to the pan.
  3. Once eggplant is softened, add the cubed zucchini.
  4. Add the mushrooms and cook until the are browned
  5. Add spinach and tomatoes, cook until the spinach has wilted.
  6. Add your garlic and italian seasonings once it is cooked and heat for just a few more minutes.
  7. Enjoy!
