A Different Flavour of Veggie Stir-Fry

Description
Most people are used to the same old, same old vegetables, so I stuck a few things in a frying pan with vegetables I wasn't used to and created a delicious vegetable stir-fry that was different that what I was used to. It's good on pasta, rice, or even just on it's own!
Ingredients
1 Tbsp Olive Oil
1 Onion
1 eggplant
2 zucchini
3 diced tomatos
Spinach
Mushrooms
Garlic
Italian Seasonings
Instructions
- Saute the onions in the olive oil until they are transparent
- Cube an eggplant and add to the pan.
- Once eggplant is softened, add the cubed zucchini.
- Add the mushrooms and cook until the are browned
- Add spinach and tomatoes, cook until the spinach has wilted.
- Add your garlic and italian seasonings once it is cooked and heat for just a few more minutes.
- Enjoy!
