Description

This salad is a nice summer meal.  It also makes a really good lunch to take to work.

Ingredients

1 large can lentils, washed

1 large tomato, chopped

1 cucumber, chopped

1/2 cup fat free sour cream or yogurt

2 tsp curry powder (or more if you like)

Optional:  dash cayenne pepper, 1/4 cup finely chopped green onions, fresh ground black pepper

Instructions

Wash the lentils well to get rid of extra salt.  Add all ingredients and mix well. 

Makes 4 generous servings.
