Chai Oatmeal w fruit and nuts
Description
I adapted this from a Canadian Living recipe. It has no added sugar or salt, and with the fruit and nuts, it's filling. When the fruit is heated as in my suggestion (not original recipe) it's like having cobbler or pie. My coworkers are always envious of my breakfast.
Serves: 6
Ingredients
- 1.5 cups large-flake rolled oats
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp cardamom
- pinch ground cloves
- pinch black pepper
- 2 cups milk
- 1.5 cups water
- 1 cup almonds (according to original recipe)
- 1 cup blueberries (according to original recipe
Instructions
Preheat oven to 350.
Combine oats, spices, milk and water in bowl. Pour into greased, 2L casserole dish. Bake for 50 minutes, stirring half way through.
Original recipe: toast almonds lightly in frying pan. Serve oatmeal with blueberries and almonds on top.
My recipe: portion out 6 servings of the oatmeal only into 6 tupperware containers and refrigerate. When ready to eat: reheat oatmeal in the microwave for 30 seconds. Stir. Add 1/2-3/4 cup fruit and 1oz. nuts to the single serving, and continue to microwave for an additional 30-45 seconds until fruit is heated through.
Possible fruit/nut combinations - will go well with probably most combinations. I've tried the following with excellent results: fresh pitted cherries with walnuts or pecans, strawberries and steamed rhubarb with walnuts, almonds and blueberries.
