Healthy Slow-cooker Meals that your Family will Love

Using a slow-cooker is an easy way to prepare healthy meals. The beauty of using a slow-cooker is that you can throw the ingredients in the pot before heading off to work, and when you get home there's a hearty meal waiting for you. Here are some great recipes that will keep the whole family well-fed and happy.

Chickpea and couscous stuffed peppers

Ingredients:

4 large bell peppers

1 can chick peas

1 cup crumbled feta

1/2 cup couscous

4 thinly sliced scallions, white and green parts separated

1 minced clove of garlic

1 teaspoon dried oregano

Salt and pepper, to taste

Directions

Prepare the peppers by slicing the tops off just below the stem. Dice the remaining pepper top and put it in to a bowl. Remove the seeds from the peppers.

Add the feta, chickpeas, couscous, white part of onions, garlic and oregano. Season with salt and pepper. Combine everything in the bowl, then stuff the peppers with the mixture.

Place the peppers upright in the slow cooker, cover and cook on high for 4 hours (or low for 8 hours). Sprinkle green parts of onions on top and serve with a salad.

Eggplant, portabello and sweet potato curry

Ingredients:

1 medium eggplant, diced in to 1 inch cubes

2 medium portabello mushrooms, diced in to 1 inch cubes

2 medium sweet potatoes, diced in to 1 inch cubes

2 tsp coriander

2 tsp cumin

1 tbsp canola oil

2 onions, diced finely

2 cloves garlic, crushed and finely chopped

1 tbsp black pepper, salt to taste

1 can tomatoes

Directions:

Heat the oil in a skillet, then fry the eggplant until browned and put in the slow cooker along with the mushrooms and sweet potatoes.

Fry the onions until soft, then add in the garlic and spices, cooking for 1 minute more then add the tomatoes to the pan and bring to a boil. Add everything into the slow cooker, and cook on low for 8 hours, or high for 4 hours.

Serve with brown rice, and a little plain yoghurt if desired.
