Pumpkin SoupVegetable soups are healthy, inexpensive and easy to make. By following a few basic steps, you can make a hearty and nutritious soup from just about any vegetable that you have on hand. Here's how:

In a large, heavy-based pot, sauté a finely chopped onion in 2 tablespoons of olive oil. Throw in a little salt and pepper, cook until the onion is soft (stirring every so often), which should take around five minutes.

Add 2 cups of chicken or vegetable stock to the pot, then throw in your vegetables of choice (1 kilo approx, see below for preparation details). Add enough water to cover the vegetables, bring the pot to boil then reduce heat and simmer until vegetables are tender - this will take around 20 minutes depending on how hard the vegetables are.

Once the vegetables are cooked, purée the soup in a blender and return to the pot. Taste the soup, then season with more salt and pepper if desired. If the soup is very thick, add water to the pot and stir it in before serving.

Root vegetables such as carrots, parsnips, beets and just about any type of squash make great soup. If you're going to use root vegetables, you should chop them into 2cm chunks before throwing into the pot. To make broccoli soup, chop up the florets, peel the stalks and cut them into 1cm chunks. Experiment with whatever veggies you have in your fridge, and try different combos to find your best blend.

To add flavour to your soup, you can try seasoning with lemon juice or a little maple syrup.

Vegetable soups freeze really well, so are great to make in bulk and keep in the freezer.

Peeled and cut butternut squash & 2 apples, some sage and stock in a pot.
Cook until soft.
Blend it in the blender and add a little maple syrup.

That's it. You won't believe how good it is.

fridge clean up soup

soup is a great way to use up veggies that aren't at their best any more in the fridge .. a slightly looking wilty pepper, or a tomatoe thats starting to get a bit soft, potatoes starting to sprout .. toss 'em all into a soup - it won't matter.

i like to throw a can of beans or lentils (well rinsed to minimise aded sodium) into my pot as well - add some protein and killer fibre.

Easy lunch idea

I love soups so what I do is cook a large pot of chicken vegetable or beef. Then I have brought really great containers that are freezer and microwave safe. They measure 2 cups. So I fill about 10 of those and freeze them. They are an easy grab from lunch. Some mornings when I dont want to get up I grab a soup, apples and bottle of water and I am set for lunch.

In UK they add Parmesan rind to Cauliflower Soup

My niece lives in the UK and says that they always add the rind from good quality Parmesan to cauliflower soup. Adds great flavor and is very much a favorite. She says that cauliflower to them is what peas are to us for most likeable vegetable for kids. Cauliflower is served two or three times a week in some form or another. Enjoy!!

you can make a vegetable soup with carrots celery and onion then just add some chicken breasts for protien proper portions of course... not hard to add rice either mmmmm could make a red soup for valintines day.

I love homemade soups! They are soooo good. I made Potato soup this weekend it was really good

Additions to basic soups!

Over the years I have eaten lots of homemade soups. I will often make a basic veg soup and freeze some. They are perfect to change up with whatever you are eating. Have some leftover fish and brown rice, add it! I have used different spices such as chilli and black beans and corn for a flavor of the southwest. The choices are endless!

Perfect for Winter!

Soup is so perfect for winter, especially after exercising outdoors, it really warms me up! I've only made my own soup once, in a cooking class, but I'm definitely going to try and make my own at home! It's not too different than making my baby's food, just more stuff added so at night me and my son can pretty much be eating the same thing.

Tuesday is soup day at our house...

We have soup every Tuesday. Today is a Quinoa Vegetable Soup. I make my soups very similar to the blog instructions but don't puree them and I usually add canned or fresh tomatoes. Last night I was making soup for today and was going to add rice or pasta but saw the bag of Quinoa in the cupboard and put in about 1/4 cup. Can't wait to eat it at lunch time.

I have been making my soups lately. I like to throw in a couple of bones with marrow for an added flavour. I enjoy eating the marrow too. No more buying them for my lunches; good for the wallet and my weight control.

Squash soups with a bit of

Squash soups with a bit of apple or pear thrown into the mix (if you intend to puree) are awesome! My favourite is a butternut squash and pear soup. I tend to do mine in the crockpot to make them even easier for those busy days. I slice, set the crock, and blend when I get home. Tasty soup, tada!
