Deluxe Low Fat Desserts to Make at Home

When you are trying to lose weight, not being able to eat the sweet treats that you crave can be a real downer! For those of you with a sweet tooth, here are two decadent low-fat desserts that are worthy of gracing any diner's dinner table, whether they are dieting or not!

Pears Poached in Red Wine. Poached PearsPlace 2 cups of dry red wine, 1/2 cup of sugar, a cinnamon stick and 1 cup water, in a pan and simmer until the sugar dissolves. Then throw in three pears (that have been peeled, cored and cut into halves), cover and simmer for 10 minutes. Take out the pears, then bring liquid to a boil for about 30 minutes until it has turned to a syrup (should give you about 1/2 a cups worth). Drizzle the syrup over the pears and serve with a little ice-cream. This should serve 6 people, so is great as a special occasion low-fat dessert.

Pineapple Upside Down Cake. Pineapple CakeOil a 9-inch square pan and preheat the over to 350 degrees. Sprinkle a tablespoon of sugar into pan, then layer canned pineapple rings or slices on the bottom. Mix together 1 cup all-purpose flour, 1/2 cup wholewheat flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda and 1/2 teaspoon salt in a bowl. In another bowl, whisk 3/4 cup low-fat buttermilk, 2 large eggs, 3/4 cup sugar, 1 tsp vanilla extract and 1/3 cup vegetable oil. Add in the flour mixture, stir until just combined (don't overmix) then pour batter over pineapple slices. Cook for an hour, then let cool for 20 minutes before removing from pan. Recipe makes 8 servings.
